Appetizer / Super Bowl Snack: Stuffed Bread
1 loaf light or dark rye bread, unsliced
2 cans sliced mushrooms, drained
8 oz. reduced fat Swiss cheese
½ cup light margarine
2 Tbs. fresh onions, chopped
1 Tbs. poppy seeds
½ tsp. garlic powder
¼ tsp. cayenne pepper
Slice top off bread. Scoop out center (if round loaf) or make a “v” cut if a long loaf. Set top aside. Mix cheese and mushrooms. Stuff into bread. Combine melted margarine, onions, poppy seeds, garlic powder, and cayenne pepper. Pour over stuffing. Replace bread top. Wrap in foil. Bake for 30-40 minutes at 350 degrees. Slice and serve. Serves 16.
